I made this dish last week and it was great. Rhoda, the cornstarch is a thickener and without it (or by using a substitution), you may not be able to achieve a thickness to coat the noodles. Stir in soy sauce mixture and bring to a boil; reduce heat and simmer until thickened, about 1-2 minutes. If there was too much vinegar, you can simply reduce the amount, to taste. I actually used spaghetti noodles but feel free to use what you have on hand – linguine, fettuccine, etc. My family loves this recipe! With all due respect, I don’t see exactly how tofu is better than chicken.
